OUR SAKE COMPANY & PHILOSOPHY
Naturally, we are not new to Japan.
Our sake brewing dates
back more than 200 years to the early 18th century. Our sake
brewery is located in the middle of a commerce center near
a river port where rice farming and silver mining have flourished.
The area is still famed for a heavy snow accumulation of
more than 12 feet on flat land. The snow accumulation is
a burden for daily life but an excellent source of water
for agriculture and sake brewing. Summers are very hot with
a temperature difference of 100° F (55° C) between
summer and winter.

Our ancestor brewers supplied the local sake needs for many
years. In 1884, the operation was incorporated into an organized
business. After WWII, sake consumption went down as the economy
regrew. Beer became a leading alcoholic beverage. Many small
and medium size sake breweries went out of business. Since
we realized we could not compete with large sake breweries
in terms of sales and cost, we decided to focus on creating
a unique, characteristic, value-added sake. We tried to develop
a more refreshing, appealing and entertaining product. We
have come up with excellent products by an innovative snow-aging
or low temperature maturation in addition to standardizing
the traditional brewing process along with quality control
in a new facility.
The company does not wish to mass produce or mass distribute
its sake nor are we inclined to super-traditional brewing
either. The company intends to manufacture the best product
possible in a limited amount. We want to sell our products
directly to retailers or restaurants without the conventional
and complex distribution channels. Similarly, we wish to
be selective in the locations in which we choose to make
our sake available. We intend to sell the best product possible
to those who have a true appreciation for our philosophy
and product quality.
Our
sake products
are
respected as one of the most renowned,
prized, and limitedly distributed sakes in Japan today. Ours
is one of the leading sakes brewed in the sake heartland,
Niigata. Niigata sake
is often characterized as softer and
more refreshing than the highly aromatic and characteristically
stiff sakes of other regions.
Highly aromatic sake may give you an inmpact in the very first sip but it might become too much pressing particularly with food later. Our products present the good Niigata character that you admire in tasting. We are highly confident to provide the excellent sake due to the innovative fermentation-aging as an authentic sake and also a special wine of rice.
